Ingredients:

  • 1 cup Arborio rice

  • 1 bunch fresh asparagus (chopped into small pieces)

  • 4 cups vegetable broth

  • 1 small onion (finely chopped)

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 lemon (zested and juiced)

  • 1/2 cup white wine (optional)

  • 2 cloves garlic (minced)

How to Make Asparagus and Lemon Risotto

  1. Warm the broth:

    • Pour the vegetable broth into a pot and place it over low heat.

    • Let it warm up but do not let it boil. Keep it warm throughout the cooking process to help the risotto cook evenly.

  2. Cook the asparagus:

    • Wash the asparagus and trim off the tough ends.

    • Chop the asparagus into small, bite-sized pieces.

    • Heat 1 tablespoon of olive oil in a large pan over medium heat.

    • Add the chopped asparagus and sauté for about 3 minutes, stirring occasionally until it turns bright green and slightly tender.

    • Remove from the pan and set aside on a plate.

  3. Sauté the onion and garlic:

    • In the same pan, melt 1 tablespoon of butter over medium heat.

    • Add the finely chopped onion and minced garlic.

    • Stir frequently and cook for about 2 minutes until the onion is soft and translucent but not browned.

  4. Add the rice:

    • Pour the Arborio rice into the pan with the onions and garlic.

    • Stir well to coat the rice in the butter and let it toast for about 1 minute.

    • The rice should look slightly translucent around the edges.

  5. Pour in the wine (if using):

    • If you're using white wine, pour in 1/2 cup and stir constantly.

    • Let the wine cook down until it is mostly absorbed by the rice, which should take about 2 minutes.

  6. Add broth, little by little:

    • Using a ladle, add about 1 cup of the warm vegetable broth to the rice.

    • Stir continuously and let the rice absorb the broth before adding more.

    • Repeat this process, adding one ladle of broth at a time and stirring frequently.

    • Continue until all the broth is used and the rice is soft and creamy (this should take about 15-18 minutes).

  7. Add the asparagus:

    • Once the rice is tender and creamy, add the cooked asparagus back into the pan.

    • Stir well to mix everything evenly.

  8. Finish with cheese, butter, and lemon:

    • Add the remaining tablespoon of butter and stir until melted.

    • Sprinkle in the grated Parmesan cheese and mix until combined.

    • Squeeze in the juice of one lemon and add the lemon zest for a fresh, zesty flavor.

    • Stir well until everything is creamy and well combined.

  9. Season and serve:

    • Taste the risotto and add salt and black pepper as needed.

    • If the risotto is too thick, add a splash of warm broth to loosen it up.

    • Serve hot with extra Parmesan and a sprinkle of lemon zest on top. Enjoy!

This Asparagus and Lemon Risotto is fresh, creamy, and perfect for welcoming spring. Enjoy this easy, restaurant-quality dish at home with your family!
